Cascina delgli Ulivi is a family winery established on a farm with Ilaria Bellotti currently at the helm. Her late father, Stefano Bellotti, is considered one of the pioneers of biodynamics in Italy when he started making natural wines in 1977 and cultivated his vineyards following biodynamic principles starting in 1984. Bellotti Semplicemente Vino Rosso comes from vineyards with soil consisting of acid-ferrous red clays. It is made in stainless steel tanks, macerating the must-wine with the skins for about 30 days and fermenting with native yeasts. Afterwards, malolactic fermentation takes place then aged 3 months on lees. Finally, the wine is gently filtered and bottled.
