2018 Champagne Dremont Pere & Fils Cuvée Ephemere 025 Brut Nature Champagne (Frederic Savart)

Ephemere 025 Noir et Blanc Grand Cru –
60% PN, 40% Chardonnay
Chardonnay Grand Cru: Avize, Cramant, Le Mesnil sur Oger. The Cote des Blancs is a “cuesta” (ridge with one steep slope/one gentle slope on the other (ie. the roche in Maconnais) - eastern limit of the Paris basin, the hillside is the result of erosion).
The vines which were used to produce Côte des Blancs wines are essentially located at the foot of the hillside on limestone (fossiliferous chalk) soils, allowing the production of elegant wines with lots of freshness and floral aromas.

Pinot Noir Grand Cru: Ambonnay, Bouzy also come from chalky soils (White Chalk from the Campanian and Santonian). Pinot Noir brings complexity and structure (aromas of fruit and spices),

Vinification: 70% in thermoregulated stainless steel vats and 30% in oak barrels (micro-oxygenation) of more than 4yrs so as not to mark tannins. Malolactic fermentation complete. Cold stabilized to avoid tartaric precipitation
Production: 9,986 bottles
Bottled July 2019. (3.5 yrs sur latte)
